Sausage Alfredo Rigatoni
Sausage Alfredo Rigatoni is filled with amazing sauce, savory sausage and a perfect pasta. It’s the perfect comfort food.
Ingredients
- 8 ounces rigatoni pasta (prepared al dente)
- 1 pound Johnsonville Sweet Italian Sausage
- 2 tablespoons olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 10-12 leaves fresh basil or 2-3 teaspoons dried
- salt and pepper to taste
- Roasted Garlic Alfredo Sauce:
- 1 head roasted garlic
- 6 tablespoons unsalted butter
- 1 ¾ cups heavy cream
- 1 ¼ cups freshly grated Parmesan cheese
- salt and pepper to taste
- ½ cup shaved Parmesan cheese for topping
- To thicken Alfredo sauce:
- 2 teaspoons flour
- 2 tablespoons heavy cream
Instructions
1. Cook the Rigatoni: Preheat your oven to 350°F and get an 8×8-inch baking dish ready with a light spray of cooking spray.
Cook the rigatoni in a large pot of generously salted water according to the package instructions until it’s perfectly al dente.
Drain the water, then drizzle a little olive oil over the pasta to keep it from sticking while you get everything else ready.
2. Cook the Sausage: In a large skillet over medium-high heat, sauté the onion and minced garlic in olive oil for about 2-3 minutes, until they’re fragrant and translucent.
Add the sausage and cook until fully done, breaking it up as it browns. Once cooked, remove from heat and stir in some basil, salt, and pepper.
Set this tasty sausage mixture aside in a large bowl.
3. Make the Roasted Garlic Alfredo Sauce: Pop those roasted garlic cloves out of their skins and mash them with a fork.
In a medium saucepan, melt the butter over low to medium heat. Add the cream and roasted garlic, heating until warm (but don’t let it boil).
Lower the heat and whisk in the Parmesan, salt, and pepper until the cheese is fully melted and the sauce is smooth.
4. Add Heavy Cream Into The Sauce: In a small bowl, mix 2 teaspoons of flour with 2 tablespoons of heavy cream until smooth, then whisk it into the sauce.
Stir until the sauce thickens to creamy perfection.
5. Bring it All Together: Pour the creamy garlic Alfredo sauce over the sausage mixture and stir until everything is well-coated.
Add the rigatoni to the mix and give it a good stir. Pour the pasta mixture into your prepared baking dish, then top it off with some shaved Parmesan.
Bake for about 30 minutes, or until it’s bubbly and perfectly golden brown on top. Enjoy!
And there you have it. This rich Sausage Alfredo Rigatoni is a meal that will elevate your dining experience and take it to a whole new level.
