Ingredients

  • French Onion Soup:
  • 1 pound salted butter
  • 3 large yellow onions, cut into large slices
  • 2 tablespoons chopped garlic
  • 1/4 cup dried Italian Seasoning
  • 2 bay leaves
  • 8 1/2 cups beef broth
  • 2 fresh thyme sprigs, leaves only
  • Salt and pepper
  • Burger:
  • Four 8-ounce burger patties
  • 4 brioche buns
  • 8 slices Gruyère
  • Paprika, for sprinkling

Instructions

1. Make the French Onion Soup: In a large pot, melt the butter over medium-high heat. Add Italian seasoning, bay leaves, onions and garlic. 

Cook, stirring every 5 minutes to avoid sticking or burning, until the onions are soft and caramelized, about 20-25 minutes.

2. Add the Broth & Simmer: Pour in the beef broth and add the fresh thyme. Turn the heat up to bring it to a low boil, then reduce to a gentle simmer for 20 minutes.

Season with salt and pepper to taste. Take it off the heat and let it cool before refrigerating overnight.

3. Reheat the Soup & Prep the Grill: The next day, reheat the French onion soup on low for 8-10 minutes (skim off any solidified butter fat before reheating).

Meanwhile, preheat a grill pan or outdoor grill to medium-high heat.

4. Grill & Assemble the Burgers: Grill the burger patties to your liking. To assemble, place the bottom half of a brioche bun in an oven-safe bowl.

Add a patty and top it with a generous scoop of the French onion soup (pile more onions on the patty and ladle the broth around the bun like a moat).

Lay 2 slices of Gruyère cheese on top and sprinkle with a little paprika. Repeat for the other servings.
