I especially enjoy this recipe because it lets me use my leftover ham bone in a fantastic way, and it’s prepared in my favorite cooking tool—the crockpot.

Crockpot Navy Bean And Ham Soup

Ingredients
- 1 (16 oz.) package dried navy beans, or soaked, drained, and rinsed according to the recipe
- 2 cups reduced-sodium vegetable broth
- 4 cups water
- 1 cup chopped yellow onion
- 1/2 cup chopped peeled carrot
- 1/2 cup chopped celery
- 1 garlic clove, minced
- 1 bay leaf
- 1/2 tsp. black pepper
- 1 large, meaty roasted ham bone

Instructions
1. Soak The Beans: Add the beans to a large pot and pour in enough water to cover them by about 2 inches.
Bring the water to a boil, then cover, turn off the heat, and let the beans sit for 1 hour. Drain and rinse.
2. Combine Beans and Vegetables in Slow Cooker: Add the beans, water, broth, onion, carrot, celery, garlic, bay leaf, and pepper to a 5- to 6-quart slow cooker and stir to mix.
3. Place Ham Bone in Mixture: Position the ham bone in the center of the mixture to infuse the soup with flavor.
4. Cook the Soup: Cover the slow cooker and cook on HIGH for 6 hours or on LOW for 8 to 10 hours until the beans are tender.
5. Remove Bone and Add Ham Back In: Take out the ham bone and discard any gristle. Add any remaining ham pieces back into the soup for a rich, hearty finish.
It’s true that it takes a bit more time to make, but it’s absolutely worth it in the end.
This delicious soup is best enjoyed with crusty bread, biscuits, or dinner rolls, but you can also serve it alongside a light salad, cornbread, or your favorite veggies.
