Ingredients

  • 1½ pounds boneless skinless chicken breasts, pounded ¼-inch thick (see note), or chicken tenderloins
  • 3 tablespoons all-purpose flour
  • Salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 (8-oz) package pre-sliced bella or button mushrooms
  • 3 tablespoons finely chopped shallots, from 1 medium shallot
  • 2 cloves garlic, minced
  • ⅔ cup chicken broth
  • ⅔ cup dry Marsala wine
  • ⅔ cup heavy cream
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons chopped fresh Italian parsley, for serving (optional)

Instructions

1. Prepare the Chicken: Place the flour, ¾ teaspoon of salt, and ¼ teaspoon of pepper into a ziplock bag. 

Add the chicken pieces, seal the bag, and shake it until the chicken is fully coated with the flour mixture. Set it aside for later.

2. Get the Pan Ready: In a large skillet, heat oil and 2 tablespoons of butter over medium-high heat. Allow it to become hot and sizzling before adding the chicken.

3. Cook the Chicken: Carefully add the chicken to the pan, shaking off any extra flour. Cook for 5-6 minutes, flipping once, until the chicken is golden brown and cooked through. 

Once done, remove the chicken from the skillet and place it on a plate.

4. Sauté the Vegetables: Melt the remaining tablespoon of butter in the same pan. Add the mushrooms and sauté for 3-4 minutes, allowing them to brown. 

Then, toss in the shallots, garlic, and ¼ teaspoon of salt. Continue cooking for another 1-2 minutes until fragrant.

5. Prepare the Sauce: Pour in the broth, Marsala wine, heavy cream, thyme, ¼ teaspoon of salt, and ⅛ teaspoon of pepper. 

Stir everything together, scraping up any browned bits from the bottom of the pan with a wooden spoon.

6. Let it simmer: Bring the mixture to a boil, then reduce the heat to medium. 

Let the sauce simmer uncovered for 10-15 minutes, allowing it to reduce and thicken, turning into a rich, dark color. Return the chicken to the pan, including any juices it has released.

7. Finish the Dish: Lower the heat to low and let it simmer for another 2-3 minutes until the chicken is heated through and the sauce has thickened further. 

Sprinkle with fresh parsley if you want.
