Ingredients

  • 1/3 cup Dutch-processed cocoa
  • 16 chopped Snickers
  • 1 ½ teaspoons instant espresso
  • 2 ounces unsweetened chocolate, chopped
  • 4 tablespoons 1/2 stick unsalted butter, melted
  • 1/2 cup plus 2 tablespoons vegetable oil
  • 1/2 cup plus 2 tablespoons boiling water
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 ¾ cups unbleached all-purpose flour
  • 2 ½ cups sugar
  • 3/4 teaspoon table salt

Instructions

1. Preheat your oven to 350°F.

2. Grease the bottom and sides of a 9×13-inch metal baking pan with butter.

3. Line the pan with a large piece of parchment paper, allowing it to extend up two or each side and overhang slightly at both or each end. Repeat this step with another piece of parchment. This setup will make it easy to lift the bars out of the pan once they’re baked. Butter the parchment as well.

4. In a large mixing bowl, whisk together cocoa powder, espresso powder, and boiling water until smooth.

5. Add the unsweetened chocolate and whisk until it melts completely.

6. Whisk in the melted butter and oil. Then add the eggs, egg yolks, and vanilla, whisking until the mixture is smooth and uniform.

7. Gradually whisk in the sugar until fully incorporated.

8. Using a rubber spatula, stir in the flour and salt until just combined.

9. Pour half of the batter into the prepared pan, spreading it evenly into the corners and smoothing the surface.

10. Sprinkle the chopped Snickers evenly over the batter.

11. Spread the remaining batter over the top, smoothing it out.

12. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs clinging to it.

13. Transfer the pan to a wire rack and let the brownies cool for about 1½ hours.

14. Use the parchment paper overhang to lift the brownies from the pan. Place them back on the wire rack and let them cool completely, about 1 hour. Cut into 2-inch squares.

Note: For the chewiest texture, ensure the brownies cool thoroughly before cutting. If using a glass baking dish, let the brownies cool for 10 minutes before removing them from the pan to prevent overbaking due to the heat retention of glass. For the best results, use high-quality chocolate.
