Instructions
1. Marinate the Chicken:
Start by marinating your sliced chicken with the ingredients listed under “Chicken Marinade.” Let it soak up those flavors for about 5 minutes, then set it aside.
2. Prep the Sauce:
In a small bowl, mix together all the “Sauce” ingredients. Give it a good stir, then set that aside too.
3. Cook the Chicken:
Heat a wok over medium-high heat and add 1 teaspoon of oil. Once the oil is hot, add the marinated chicken and stir-fry until it’s fully cooked. Remove the chicken from the wok and set it aside.
4. Sauté the Veggies:
In the same wok, add another teaspoon of oil. Toss in the garlic and shallots, frying for about 10 seconds until they’re softened.
Add the peas and carrots, giving them another quick stir for about 10 seconds until they’re just tender. Push everything to one side of the wok.
5. Scramble the Eggs:
In the empty space of the wok, add another teaspoon of oil. Crack in the eggs and scramble them until they’re just set. Once scrambled, mix them together with the veggies.
6. Combine Everything:
Add the remaining oil along with the cooked rice. Toss everything together in the wok until the rice is well combined with the other ingredients. Toss the chicken back into the mix.
7. Add the Sauce:
Pour the pre-mixed sauce around the edges of the wok (this method helps develop even more flavor as the sauce hits the hot wok). Stir everything together until the rice is evenly coated and has a nice brown color.
8. Serve and Enjoy:
Remove the wok from the heat, serve up your delicious dish, and enjoy!
This Chinese chicken fried kitchen dish is a flavor-packed, easy-to-make meal that brings all the savory goodness of marinated chicken, fresh veggies, and perfectly seasoned rice to your table!
