When I can’t decide between taco night and pasta night, this Taco Spaghetti is my delicious solution! 

It’s the perfect mashup of two of my favorite comfort foods – all the cheesy goodness of spaghetti with the bold flavors of a classic taco.

Taco Spaghetti

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1/2 onion (diced)
  • 1 1/2 pounds ground beef
  • 1 packet taco seasoning
  • 10 ounces Rotel tomatoes
  • 3 tablespoons tomato paste
  • 1 1/2 cups beef broth
  • 3 ounces cream cheese (softened)
  • 12 ounces spaghetti noodles (cook and drained)
  • 1 ½ cups Colby Jack cheese (shredded)
  • Cilantro (for garnish)

Instructions

1. Cook the Pasta:
Start by cooking the pasta according to the package directions. Once it’s done, drain it and set it aside.

2. Sauté the Onions and Garlic:
In a large skillet, heat the oil over medium heat. Add the onions and cook until they’re tender and translucent. Then, toss in the garlic and cook for another minute until fragrant.

3. Cook the Ground Beef:
Add the ground beef to the skillet and cook over medium-high heat until it’s no longer pink. If there’s excess fat, drain it off.

4. Mix in the Flavor:
Stir in the taco seasoning, Rotel tomatoes, tomato paste, beef broth, and softened cream cheese. Cook everything together until the cream cheese is fully melted and the mixture is well combined.

5. Combine and Melt:
Add the cooked spaghetti to the skillet, along with the shredded cheddar cheese. Stir everything together and heat through until the cheese is melted and gooey.

6. Garnish and Serve:
Finish it off with a sprinkle of fresh cilantro for a burst of color and flavor. Serve it up and enjoy this cheesy, flavorful pasta dish!
