- 1 medium english cucumber (diced)
- 1 small red onion (diced)
- 1 medium green, yellow, orange bell pepper (diced)
- 3 tablespoons honey
- 3 tablespoons minced fresh cilantro
- 3 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- Salt (to taste)
- Black pepper (to taste)
