Teriyaki Chicken Lettuce Wraps

These Teriyaki Chicken Lettuce Wraps are the ultimate fresh, flavorful, and fun-to-eat dinner idea!

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 3/4 cup reduced sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 2 teaspoons cornstarch (plus 2 teaspoons water)
  • 1 cup broccoli cut into small pieces
  • 1/2 red pepper, chopped
  • 1/4 cup water chestnuts
  • 1/2 cup shredded carrots
  • Salt and pepper, to taste
  • Butterhead or green leaf lettuce
  • Optional toppings: (green onions, sesame seeds)

Instructions

1. Prep the Chicken:
Cut the chicken into bite-sized pieces and season them with a good sprinkle of salt and pepper.

2. Cook the Chicken:
Heat up a non-stick pan with a spray of olive oil. Toss in the chicken and cook it until it’s no longer pink and perfectly golden.

3. Add the Flavor:
Stir in the minced garlic and let it sizzle for about 30 seconds. Then, pour in the water, soy sauce, rice vinegar, ginger, and brown sugar. Bring that delicious combo to a gentle simmer.

4. Thicken It Up:
In a small bowl, whisk together cornstarch and water until smooth. Add it to the pan, stirring constantly, and let everything simmer for 5 minutes until the sauce starts to thicken up.

5. Veggie Time:
Toss in the broccoli, red pepper, and carrots. Stir everything around for another 5 minutes, letting those veggies soak in all that flavor.

6. Finish with Water Chestnuts:
Stir in the water chestnuts for a bit of extra crunch.

7. Assemble the Lettuce Wraps:
Lay out your fresh lettuce leaves and divide the tasty chicken mixture evenly among them. If you’re feeling fancy, sprinkle some green onions and sesame seeds on top.
