Strawberry Banana Bread

Ingredients
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 4 tablespoons unsalted butter (melted and cooled)
- 3/4 cup vanilla yogurt
- 3/4 cup sugar
- 2 eggs beaten
- 2 teaspoon vanilla extract
- 3 very ripe bananas mashed well
- 1 cup diced strawberries

Instructions
1. Preheat the Oven:
Start by preheating your oven to 350°F. Lightly spray a 9×5 inch bread pan with cooking spray so your delicious bread won’t stick.
2. Whisk the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, and salt. Set that aside for now.
3. Mix the Wet Ingredients:
In a large bowl, whisk the melted butter and sugar together until smooth. Then, add the yogurt, eggs, mashed bananas, and vanilla, giving it all a good whisk until well combined.
4. Combine Wet & Dry:
Gently fold the dry ingredients into the wet mixture, being careful not to overmix. You want everything just combined – no one likes overmixed batter!
5. Add the Strawberries:
Fold in those juicy strawberries. The batter will be thick, but don’t worry, that’s what makes it so delicious!
6. Time to Bake:
Pour the batter into your prepared bread pan and bake for 60 to 65 minutes. Check with a toothpick – if it comes out clean or with a few crumbs, you’re good to go!
7. Cool It Down:
Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Let it cool for at least an hour before slicing into that yummy goodness.
8. Storage Tip:
Because of the fresh strawberries, this bread is best enjoyed within 2-3 days. Store it in an airtight container to keep it fresh!
