Ingredients
- 1 ½ pounds boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper, to taste
- 8 cups chicken stock
- 1 onion, diced
- 3 carrots, peeled and diced
- 3 ribs celery, diced
- 4 cloves garlic, minced
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- 2 bay leaves
- 8 ounces spaghetti, broken into thirds
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
1. Season and Prep the Chicken: Sprinkle salt and pepper over the chicken, adjusting to your taste. Place the chicken into your 6-quart slow cooker and set it aside.
2. Add the Veggies & Herbs: Pour in the chicken stock, followed by the chopped onions, carrots, celery, garlic, thyme, rosemary, and bay leaves.
