Eggs filled with proteins, juicy sausage full of deliciousness, or sweet pancakes poured with maple syrup — sometimes it is truly hard to choose.
Yet, what if I tell you that there is one delicious treat that combines these breakfast classics into one and is so easy to make?
Yes, it does exist and its name is Pancake Sausage Bites!
Pancake Sausage Bites
A bite-sized breakfast dream where sweet pancakes meet savory sausage in the form of delicious pancake sausage bites.
Ingredients
- 12 ounce Johnsonville breakfast sausage links, or your favorite brand
- 1 cup all purpose flour
- 1 tablespoon sugar
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon baking powder
- 1 large egg
- 1 cup buttermilk
- Powdered sugar and maple syrup, if desired
- 1½-2 cups vegetable oil, for frying

Instructions
1. Sauté the Sausages: Brown the sausages in a large skillet until cooked through. Transfer them to a plate lined with paper towels to drain the excess grease.
2. Slice Sausages: After the sausages cool slightly, cut each link into three smaller sections and set aside.
3. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking soda, salt, and baking powder. Set this dry mixture aside for later.
4. Whisk Wet Ingredients: In a separate small bowl, beat the egg and buttermilk together until well combined.
5. Combine Wet and Dry Mixtures: Slowly add the wet ingredients to the dry mixture, stirring gently. It’s fine if the batter is slightly lumpy—don’t overmix!
6. Heat Oil: In a deep saucepan, warm oil over medium-high heat until it’s ready for frying.
7. Batter the Sausages: Dip each sausage piece into the pancake batter, making sure they’re well coated.
8. Fry the Battered Sausages: Fry a few sausage bites at a time in the hot oil, turning them until they’re golden brown on all sides. Use a slotted spoon to lift them out, then place them on a fresh paper towel-lined plate.
9. Repeat Frying Process: Continue battering and frying the remaining sausage pieces until all are golden and cooked through.

I personally mostly like to eat these delicious bites for breakfast, but you can also enjoy them on the go and with some other ingredients like honey, fruit, or fruit syrup.
Although I would always recommend you to consume them while warm, you can also store them in the fridge for later or in the freezer for some other day.
