Salads are quick and easy to make, incredibly healthy, and, most importantly, they have an amazing and often refreshing flavor profile.

Beet salad combines all these characteristics, and the recipe I’m about to share creates an even more flavorful dish.

The key ingredient that makes all the difference is feta cheese, which adds a delightful tangy flavor.

Ingredients

  • 4 beets, trimmed, leaving 1 inch of stems attached
  • ¼ cup crumbled feta cheese
  • ¼ cup minced shallot
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste

Instructions

1. Gather Ingredients: Collect all ingredients so they’re ready for use.

2. Preheat Oven: Set your oven to 400°F (200°C) to prepare for roasting the beets.

3. Wrap and Arrange Beets: Individually wrap each beet in aluminum foil and place them on a baking sheet.

4. Roast Beets: Roast the foil-wrapped beets in the oven for about 1 hour, until they are fork-tender.

5. Cool, Peel, and Slice: Allow the beets to cool enough to handle, then peel off the skins and cut the beets into 1/4-inch slices.

6. Mix the Vinaigrette: While the beets roast, whisk together parsley, olive oil, shallots, red wine vinegar, and balsamic vinegar in a bowl.

Add salt and pepper to taste, and set aside.
