Instructions
1. Preheat the oven: Preheat your oven to 325°F and line a 12-cavity cupcake tin with liners.
2. Make the crust mixture: In a small bowl, combine graham cracker crumbs, salt, sugar, and melted butter until it resembles wet sand.

3. Press crust into liners: Firmly press about 1 to 1 ½ tablespoons of the crumb mixture into each liner using the bottom of a clean cup.

4. Bake the crusts: Bake the crusts for 8-10 minutes, or until golden brown. Remove and let cool completely. Lower the oven to 300°F.
5. Prepare cheesecake filling: In a mixer, beat the cream cheese and sugar on low speed until smooth and fully combined.

6. Add eggs one at a time: Add the eggs one by one, mixing well and scraping down the sides of the bowl between each addition.

7. Add heavy cream and vanilla: Pour in the heavy cream and vanilla extract and mix until combined.

8. Fill the liners: Fill each cupcake liner almost to the top with the cheesecake filling.
9. Bake the cheesecakes: Bake for 15 minutes, then turn off the oven. Let the cheesecakes sit in the oven for 30 minutes with the door cracked open.

10. Cool and refrigerate: Remove the cheesecakes from the oven, let them cool to room temperature, then transfer them to the fridge.
11. Caramelize the tops: Just before serving, sprinkle 1 teaspoon of sugar on top of each cheesecake.
Use a handheld torch to melt the sugar until it caramelizes, then let it harden for a few minutes before serving.

And there you have it—an elegant dessert that’s surprisingly easy to make. You don’t have to guess that it is even easier to eat.
All you have to do is to enjoy its deliciousness!
