Ingredients

  • 1 ½ pounds of ground beef or turkey
  • ½ cup of finely chopped white onion
  • 1 cup of seasoned bread crumbs
  • 1 tablespoon of minced garlic
  • 1 tablespoon of Worcestershire sauce
  • 1 large egg (beaten)
  • ½ cup of BBQ sauce
  • ⅓ cup of cottage cheese
  • 2 pounds of potatoes peeled and diced
  • ½ cup of unsalted butter
  • ½ cup of sour cream
  • ½ cup of warm milk or Half-and-half
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1 ½ cups of shredded cheddar cheese

Instructions

1. Preheat the Oven: Start by preheating your oven to 375°F. Lightly grease a 9×13-inch baking pan with nonstick spray to keep everything from sticking.

2. Make the Meat Mixture: In a large bowl, combine the ground beef or turkey, chopped onion, minced garlic, seasoned bread crumbs, Worcestershire sauce, beaten egg, cottage cheese, and BBQ sauce. Mix everything together until well combined.

3. Bake the Meatloaf: Transfer the meat mixture into your prepared baking pan, spreading it out evenly. Bake in the preheated oven for 30 minutes.

4. Cook the Potatoes: While the meatloaf is baking, place the diced potatoes in a large pot, cover them with water, and cook over medium heat until they’re tender.
