  • 4 eggs (room temperature)-separated
  • ¾ cup sugar
  • ½ cup unsalted butter-melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup freshly squeezed lemon juice
  • grated zest from 2 large lemons
  • 1 ¾ cups milk-lukewarm
  • powdered sugar for dusting

Instructions

1. Get Ready to Bake: Preheat your oven to 325°F. Line an 8×8-inch baking pan with parchment paper, letting the paper hang over the edges for easy lifting later. 

Lightly coat the paper with cooking spray, then set the pan aside. Whisk the egg whites until they form stiff peaks, then set them aside as well. 

In a separate bowl, beat the egg yolks with the sugar until they turn a pale yellow.

2. Blend the Batter: Add the melted butter and vanilla to the yolk mixture, stirring until everything is smooth and combined. Next, mix in the flour until fully blended.

3. Add the Lemon and Milk: Pour in the lemon juice and zest, mixing until they’re fully incorporated. Gradually add the milk, beating until the mixture is well combined.

4. Fold in the Egg Whites: Gently whisk in the whipped egg whites by hand, leaving some small lumps. These lumps will float to the top as the cake bakes, forming a lovely top layer.
