With juicy peaches, zesty jalapeños and a well seasoned chicken, this is a quick and easy dinner that is sure to impress. So, let’s get right into it.

Ingredients

Peaches:

  • 2 yellow peaches, pitted, sliced

Peach Glaze:

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken:

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

1. Prepare the Glaze: In a medium bowl, whisk together all the glaze ingredients until smooth and fully combined. Set it aside for later use.

2. Season the Chicken: Pat the chicken thighs dry. In a small bowl, combine salt, black pepper, and chili powder. 

Rub this seasoning blend all over the chicken to ensure an even coating.

3. Cook the Chicken: Heat oil in a large nonstick skillet over medium heat. Now that the oil has heated up enough, add the chicken thighs.

Sear the chicken for about 5 minutes on one side, then flip, lower the heat to medium-low, and continue cooking for another 5 minutes or until the internal temperature reaches 165°F.

Transfer the chicken to a plate and cover with foil to keep it warm.

4. Sauté the Jalapeños & Peaches: Using the same skillet, increase the heat to medium and add the jalapeño slices. 

Sauté them for about 3 minutes until softened. Next, add the peaches and cook for another 3 minutes until they become tender.

5. Add the Glaze: Pour the peach glaze into the skillet with the jalapeños and peaches.

Stir to combine, ensuring the ingredients are evenly coated with the glaze.

6. Finish the Dish: Return the chicken to the skillet and spoon the peach-jalapeño glaze over it.

Let it cook for an additional 1-2 minutes to warm the chicken through.

7. Serve: Serve the chicken warm, topped with the sweet and spicy glaze.
