Silky, sweet caramel flan with a perfect flip! This creamy dessert is a crowd-pleaser and will leave everyone asking for seconds.

Ingredients

  • CARAMEL TOPPING:
  • ¾ cup granulated sugar
  • ¼ cup water
  • CUSTARD:
  • 1 (8 ounce package) cream cheese softened
  • 2 tablespoons granulated sugar
  • 1 can sweetened condensed milk
  • 5 large eggs
  • 2 teaspoons vanilla
  • 1 can evaporated milk

Instructions

Caramel Topping:
1. In a heavy saucepan, combine the sugar and water over medium heat. Stir occasionally as it melts and begins to boil. Keep an eye on it – when it starts turning a light amber color, take it off the heat immediately.

2. Quickly pour the caramel into an ungreased 9-inch x 2-inch cake pan or a 2-quart baking dish. Don’t worry if it hardens in the bottom of the pan – that’s totally normal!

Custard:

1. Preheat your oven to 350°F.

2. In a mixer, beat the cream cheese until it’s silky smooth. Make sure there are no lumps left!

3. Add the eggs one at a time, mixing well after each addition. Scrape the bowl to make sure the cream cheese is fully blended – lumpy custard is a no-go!

4. Pour in the remaining ingredients and mix until the custard is nice and smooth.

5. Carefully pour the custard over the hardened caramel in the pan.

Baking Time:

1. Place the custard-filled pan inside a larger baking dish or roasting pan with high sides. Pour boiling water into the larger pan, making sure the water comes about 1 inch up the sides of the custard pan. This water bath helps the custard cook evenly.

2. Bake for 50-60 minutes, until the center is still just a little jiggly.

Cooling & Serving:

1. Once baked, remove the custard from the water bath and let it cool for about an hour. Then, cover and refrigerate overnight – trust me, the flavors get even better!

2. When you’re ready to serve, place the pan in a bit of hot water for about a minute to loosen the caramel. Run a knife around the edges, then flip the custard onto a rimmed serving plate with one smooth move. Voilà!
