Soup is something I enjoy year-round, whether it’s summer or winter, because it’s so comforting and quite nutritious.
At the same time, I’m a big fan of spicy, Mexican-inspired flavors that can really heat up my mouth.
While looking for ways to combine these two elements, I discovered a dish from Tex-Mex cuisine called taco soup.
However, I didn’t want to spend all day making it, so I kept searching and found the perfect recipe that’s ready in just 30 minutes.
30-Minute Taco Soup
This easy 30-minute taco soup brings together all the cozy comfort of a classic soup with the bold, spicy kick of Tex-Mex flavors.
Ingredients
- 1 lb ground beef
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 packet (2 tablespoons) taco seasoning
- 2 (4 oz each) cans green chilies
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can pinto beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 2 cups beef broth
- 1 (15 oz) can crushed tomatoes
- Kosher salt and freshly ground black pepper, to taste

Instructions
1. Cook the Ground Beef: Heat a large pot or Dutch oven over medium-high heat. Add the ground beef, season with salt and pepper, and cook, breaking it up as it browns.
2. Sauté the Onion: Once the beef is halfway cooked, add diced onion and continue cooking until the beef is no longer pink.
3. Add Bell Pepper and Garlic: Stir in the chopped bell pepper and minced garlic, cooking for about 1 minute until fragrant.
4. Incorporate the Seasoning: Sprinkle in the taco seasoning and mix well to coat all the ingredients.
5. Add Main Ingredients: Stir in the green chilies, black beans, pinto beans, corn, beef broth, and crushed tomatoes, combining everything thoroughly.
6. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to a low simmer. Let it cook for 20-30 minutes, stirring every so often.
7. Season to Taste: Taste the soup and adjust the seasoning as needed—add more salt, pepper, or taco seasoning to your liking.
8. Serve and Garnish: Ladle the soup into bowls and top with your favorite garnishes like shredded cheese, sour cream, avocado slices, or crispy tortilla chips.
