Taco night meets pasta night with this Cheesy Beef Taco Pasta – a quick and comforting dish that’s bursting with flavor.

Ingredients

  • 1 pound ground beef
  • 1 pack taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 8 ounces pasta
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup chicken or beef broth
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, parsley or green onions for garnish (optional)

Instructions

1. Cook the Pasta:
Begin by cooking your pasta according to the package directions. Once it’s done, drain it and set it aside for later.

2. Brown the Beef:
In a large skillet, heat some olive oil over medium-high heat. Add the diced onion and minced garlic, cooking until they’re soft and fragrant. Toss in the ground beef, breaking it up as it cooks. Keep cooking until the beef is browned and fully cooked.

3. Add Seasonings and Veggies:
Sprinkle in the taco seasoning, stirring to coat the beef evenly. Pour in the can of diced tomatoes with green chilies (including the juice) and mix everything well. Add the corn and black beans, stirring until all the ingredients are nicely combined.

4. Mix in the Pasta:
Turn the heat down to medium and add the cooked pasta to the skillet. Pour in the chicken or beef broth and give it a good stir. Let the mixture simmer for about 5 minutes to allow the flavors to come together.

5. Make it Cheesy:
Remove the skillet from the heat and stir in the sour cream until it’s well blended. Sprinkle the shredded cheddar and mozzarella cheeses on top of the pasta mixture. Cover the skillet with a lid or foil, allowing the cheese to melt into gooey goodness.

6. Serve and Enjoy:
