A completely new twist on preparing chicken. This recipe blends cabbage with fresh veggies and savory seasonings for a perfect dinner.

Ingredients

  • 3 tbsp olive oil
  • 1 ½ lb boneless chicken thighs, cut into small pieces
  • 1 medium cabbage
  • 2 medium carrots (shredded)
  • 1 tbsp paprika
  • 2 tbsp. tomato paste
  • 1 cup chicken stock
  • ⅔ tsp. salt or to taste
  • ¼ tsp. pepper or to taste
  • 1 tbsp. hot sauce optional
  • 2 tbsp. chopped fresh parsley

Instructions

1. Sizzle the Chicken: Heat a large sauté pan over medium-high heat. Add a splash of olive oil and toss in the chicken. 

Let it sizzle for 5-7 minutes, stirring occasionally, until it’s nicely browned and looking delicious.

2. Prep the Cabbage: While the chicken is cooking, slice the cabbage into thin strips, just like you would for coleslaw. Get those veggies ready for the pan!

3. Add Some Flavor: Sprinkle in the paprika in your chicken and stir in the tomato paste. Mix it all up and cook for another 5 minutes to let those flavors mingle.

4. Bring in the Cabbage: Add the sliced cabbage to the pan and sauté for 5 more minutes, letting it soften and soak up all the goodness.

5. Mix It Up: Add the shredded carrots, chicken stock, and a pinch of salt and pepper. 

Stir everything together and let it cook uncovered, stirring occasionally, for about 40 minutes or until all the liquid has evaporated.

6. Spice It Up & Serve: If you like a little heat, stir in a tablespoon of hot sauce. Finish it off with a sprinkle of fresh parsley for some color and extra flavor.
