Ingredients
- 3-4 lb. Beef roast
- 2 Tbsp. Olive oil
- 2 tsp. Salt
- 6 tsp. Minced garlic
- 1 tsp. Pepper
- 2 C. Beef broth
- 1 C. Red cooking wine
- ¼ C. Worcestershire sauce
- 1 lb. Baby carrots
- 2 Onions , large, cut into wedges
- 1 lb. Red potatoes , cut into large pieces
Instructions
1. Preheat the Oven: Set your oven to 350 degrees Fahrenheit and let it warm up while you prep.
2. Sear the Roast: Heat the olive oil in a large skillet over medium-high heat. Season the roast generously with salt and pepper, then sear it on all sides until it’s beautifully browned.
3. Prep the Baking Dish: Place the seared roast in the center of a large baking or roasting dish. Surround it with your choice of vegetables for a hearty meal.
4. Make the Sauce: In the same skillet, add the minced garlic to the remaining oil and sauté for about 30 seconds to release its delicious aroma.
Then, whisk in the wine, beef broth, and Worcestershire sauce. Stir everything together and bring it to a light boil.
5. Assemble and Bake: Pour the flavorful sauce over the roast and vegetables in the dish. If you’re using a roasting dish, cover it with the lid. If you’re using a baking dish, seal it tightly with aluminum foil. Pop it in the oven and bake for about 3 hours until the roast is tender and the flavors are melded to perfection.
Enjoy your mouthwatering roast and veggies straight from the oven!
