If you don’t have a beef roast, try using pork shoulder or lamb for a different flavor. Replace olive oil with vegetable oil or butter.

For a non-alcoholic option, swap red cooking wine with grape juice or extra beef broth.

Soy sauce can stand in for Worcestershire sauce, and sweet potatoes or parsnips make great alternatives to red potatoes and carrots.

Instructions

1. Preheat the Oven: Let’s start by setting your oven to 350°F. While it preheats, you can focus on prepping your roast.

Preheating ensures the oven is ready to lock in all those incredible flavors, so don’t skip this step!

Use this time to gather your ingredients and tools, so everything is within arm’s reach when you start cooking.

2. Sear the Roast: Heat up a large skillet over medium-high heat, adding a drizzle of olive oil to coat the bottom.

Take your beef roast and season it generously with salt and freshly cracked black pepper—don’t hold back, this is where the flavor starts!

Once the skillet is hot and shimmering, sear the roast on all sides, about 2-3 minutes per side, until it’s golden brown and has a beautiful crust.

This step locks in the juices and gives the roast a delicious, caramelized exterior. Set the roast aside, and prepare for the next step.

3. Prep the Baking Dish: Grab a large baking or roasting dish and place your perfectly browned roast right in the center.

Surround it with your favorite vegetables—think baby potatoes, carrots, onions, and even parsnips for a touch of sweetness.

Arrange them snugly around the roast so they can soak up all the incredible juices as it cooks. Your dish should already be looking like a hearty, comforting meal!

4. Make the Sauce: Return to the skillet you used for searing the roast, keeping all those flavorful browned bits intact.

Add the minced garlic to the remaining oil and sauté for about 30 seconds, just enough to release its mouthwatering aroma.

Next, pour in the red wine (or beef broth if you prefer), Worcestershire sauce, and a splash of beef broth.

Whisk everything together, scraping up those tasty bits stuck to the pan. Bring the sauce to a gentle boil, letting it thicken slightly and turn into a rich, savory base for your roast.

5. Assemble and Bake: Now for the fun part—bringing it all together! Pour that flavorful sauce evenly over the roast and vegetables, making sure everything is coated for maximum flavor.

If you’re using a roasting dish, secure the lid tightly. For a baking dish, cover it well with aluminum foil to lock in the steam and juices.

Slide the dish into your preheated oven and let it bake for about 3 hours.

This slow cooking process transforms the roast into a tender, melt-in-your-mouth masterpiece, while the vegetables become perfectly cooked and infused with all the rich flavors of the sauce.
