Beef Chow Mein

Ingredients
- CHOW MEIN:
- 200g/ 7 oz chow mein noodles
- 2 garlic cloves, minced
- 1 1/2 tbsp canola oil
- 200g/ 7 oz ground beef
- 3 green onion stems
- 1 egg
- 2 cups green cabbage, sliced
- 1 carrot, peeled and cut into batons
- 1 heaped cups bean sprouts
- CHOW MEIN SAUCE:
- 1 1/2 tbsp oyster sauce
- 1 1/2 tbsp light soy sauce
- 1 1/2 tsp dark soy sauce
- 1 1/2 tsp white sugar
- 1 1/2 tbsp Chinese cooking wine
- Pinch white pepper
- SAUCE THICKENER:
- 3 tbsp water
- 1 1/2 tsp cornstarch

Instructions
1. Make the Sauce:
In a small bowl, mix all the sauce ingredients together and set aside. You’ll use part of it to flavor the beef, and the rest will go in with the noodles later.
2. Prepare the Sauce Thickener:
In a separate small bowl, mix the cornstarch and water to make a slurry. This will help thicken the sauce later.
3. Cook the Noodles:
Prepare the noodles according to the package directions, then drain and set aside.
4. Cook the Beef:
Heat the oil in a large non-stick pan over high heat. Add the garlic and cook for about 10 seconds until fragrant.
Add the beef and cook until it’s no longer pink. Stir in 1 1/2 tablespoons of the sauce and mostly the white parts of the green onions. Cook for another 2 minutes until the beef gets a nice caramelized color.
5. Thicken the Sauce:
Mix the cornstarch slurry into the remaining sauce and set it aside.
6. Add the Egg:
Crack the egg into the pan and stir it through the beef, letting it scramble as it cooks. The egg helps everything stick together, making each bite extra flavorful!
7. Cook the Veggies:
Once the egg is mostly cooked, toss in the carrots and cabbage. Stir-fry for about a minute, just until the cabbage starts to soften.
8. Add the Noodles and Sauce:
Give the sauce a quick stir, then add it to the pan along with the cooked noodles and bean sprouts. Toss everything together for about a minute until the sauce is evenly distributed. Add the green parts of the green onions and toss for another minute.
