Asian Cucumber Salad

Ingredients
- 6 Mini or Persian cucumbers
- 2 teaspoon salt
- 1 tablespoon soy sauce
- 2 cloves garlic minced
- 1 tablespoon rice vinegar or white vinegar
- 1 tablespoon Chinese chili oil
- 1 tablespoon white granulated sugar
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
- 2 tablespoon green onion finely sliced

Instructions
1. Prep the Cucumbers:
Start by giving your cucumbers a good wash and trimming off the ends. Slice them however you like – a classic round slice works perfectly, or get creative with a spiral cut if you’re feeling fancy!
2. Salt and Soak:
Sprinkle some salt over the cucumber slices and gently massage it in. Let the cucumbers hang out in the salt for about 5 minutes, but no longer than 10 minutes (we don’t want them to get too soft).
Rinse them well with cold water 3-4 times to make sure all the salt is gone. Strain and set them aside.
3. Whip Up the Dressing:
In a separate bowl, mix together your dressing ingredients until they’re well combined and ready to work their magic.
4. Toss and Serve:
Pour the dressing over your cucumbers and gently toss everything together. That’s it – time to dig in and enjoy your fresh, flavorful cucumber salad!
