I myself am not a vegan or vegetarian but I skip meat dishes from time to time. Most vegetables are packed with nutrients, so with this habit, I occasionally reward my body with what it needs the most. 

Of course, the fact that it is only vegetables and spices does not mean that something truly flavorful cannot be made with these ingredients. 

The best proof of that is sautéed asparagus and mushrooms that combine crisp asparagus, tender mushrooms, and a hint of garlic. 

Aside from being very healthy and quite delicious, this dish is also extremely easy to make.

This easy sautéed asparagus and mushrooms recipe will give you the results that will satisfy both your palate and your body.

Ingredients

  • 1 pound fresh asparagus
  • 8 ounces sliced cremini mushrooms
  • 1 clove garlic, minced
  • 1 tablespoon refined coconut oil
  • flaky sea salt to taste
  • ground black pepper to taste

Instructions

1. Prepare the Asparagus: Cut off the woody ends and slice the spears into 1 1/2-inch sections.

2. Warm the Oil: Heat some refined coconut oil in a large skillet set to medium.

3. Sauté the Mushrooms: Add the cremini mushrooms to the skillet and cook, stirring from time to time, until they become tender, about 8-10 minutes.

4. Cook the Asparagus: Mix in the asparagus and continue cooking until it turns a vibrant green and reaches desired tenderness, around 3-5 minutes.

5. Incorporate the Garlic: Add minced garlic during the last minute of cooking for an extra burst of flavor.

6. Season to Taste and Serve on a Plate: Sprinkle with flaky salt and freshly ground black pepper before serving.
