Ingredients
- For the cake:
- 3 large eggs
- ½ cup oil
- ¾ cup water
- ¼ cup maraschino cherry juice

- 1 box vanilla cake mix
- 16 maraschino cherries, cut into quarters

- 4 ounces (1/2 block) cream cheese, softened to room temperature
- ⅓ cup salted butter, softened to room temperature
- 2 cups powdered sugar
- ½ teaspoon almond extract
- 1 Tablespoon maraschino cherry juice
Instructions
1. Preheat & Prep: Set your oven to 350°F and get your 9×13-inch baking dish ready by giving it a quick spray with non-stick cooking spray.

2. Mix It Up: In a large bowl, grab your stand mixer (or hand mixer) and combine 3 large eggs, 1/2 cup oil, 3/4 cup water, 1/4 cup maraschino cherry juice, and 1/2 teaspoon almond extract.
Let the mixer do its thing until it’s all nicely blended.
3. Add the Cake Mix: Now, pour in a box of vanilla cake mix and mix everything together.
