Chicken Salad
Easy and flavorful, this Chicken salad is a perfect meal, loaded with protein, and fresh nutritious ingredients.
Ingredients
- 12 ounces cooked chicken breast, finely chopped (from 2 breasts of rotisserie chicken)
- 1/3 cup light mayonnaise
- 1/2 cup celery, chopped
- 1/3 cup red onion, diced (or scallions or chives)
- 2 tablespoons chicken broth, optional
- 1 teaspoon Dijon
- 1/2 teaspoon seasoned salt
- black pepper, to taste

Instructions
1. Prepare the Chicken Bath: Place your chicken breast in a small pot and pour in enough broth to cover it. If the broth doesn’t quite do the trick, just top it off with water.
2. Season the Pot: Add some salt and pepper, along with a stick of celery and its leaves. Feeling fancy? Throw in a few herbs like parsley, garlic, onion, or any of your favorite aromatics.
3. Simmer Time: Bring everything to a boil, then lower the heat to a gentle simmer. Let the chicken cook for about 5 minutes.
4. Let it Rest: Remove the pot from the heat, cover it up nice and tight, and let the chicken relax for 15-20 minutes, or until the thickest part hits 160°F.
5. Cool and Chop: Your chicken should now be perfectly cooked through. Let it cool for a bit, then chop it up and you’re ready to go!
6. Mix everything together in a medium bowl until well combined. Give it a taste test, and adjust the salt and pepper as needed.
