However, that isn’t always the case. These Golden Oreo Strawberry Cheesecake Bars are a delight that will definitely surprise you, so let’s try and make it.
Golden Oreo Strawberry Cheesecake Bars
A delicious combination of Oreo crust, cheesecake and sweet strawberries that is completely irresistible.
Ingredients
- 3 Tbls unsalted butter melted
- 18 golden Oreos
- For the strawberry sauce
- 1 & 1/2 Cup strawberries medium dice
- 1 Tbls granulated sugar
- 1 Tbls water
- 2 tsp lemon juice fresh squeezed
- 1/2 tsp cornstarch
- For the cheesecake filling
- 8 oz cream cheese softened
- 1/3 Cup sour cream
- 1/3 Cup sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 2 tablespoons all-purpose flour
- For the topping
- 8 golden Oreos crushed

Instructions
1. Preheat and Prep the Crust: Preheat your oven to 350°F. Add 18 golden Oreos to a food processor and pulse until fine crumbs form. Drizzle in the melted butter and pulse again until everything is coated.
2. Form the Crust: Press the buttery Oreo crumbs into an 8-inch baking pan lined with greased foil or parchment paper. Pop it in the oven for 5 minutes, then remove and let it cool on the counter.
3. Make the Strawberry Sauce: Place the strawberries, 1 tablespoon of sugar, and 1 tablespoon of water into a saucepot.
Bring it to a boil, cover, and let it simmer for 5-10 minutes, stirring occasionally until the strawberries soften.
4. Thicken the Sauce: Mix lemon juice with cornstarch and stir it into the strawberry mixture. Continue simmering until the sauce thickens. Blend the sauce until smooth, transfer to a bowl, and set aside.
5. Prepare the Cheesecake Filling: In a food processor, combine the cream cheese, sour cream, granulated sugar, vanilla, egg, and flour.
Pulse until everything is smooth and creamy. Pour the cheesecake mixture onto the Oreo crust and spread it evenly.
6. Add Strawberry Sauce and Bake: Pour the strawberry sauce over the cheesecake layer. Bake at 325°F for 36 minutes, or until the center is just a little jiggly.
7. Cool and Add Toppings: Take the bars out of the oven and let them cool on a wire rack for 10 minutes.
Crush the remaining Oreos and sprinkle them on top and add a few strawberries if you like. Allow them to cool completely.
8. Chill and Serve: Cover the pan with plastic wrap and refrigerate for at least 3 hours before cutting the bars into squares.
Even though it’s hard to stay patient when this delicacy is resting in the fridge, it’s well worth the effort because the results are absolutely amazing.
