This vibrant broccoli salad combines sweet cranberries, smoky almonds, and a creamy dressing for a flavorful and nutritious dish that’s as easy to make as it is to enjoy!

Ingredients

  • 1 pound broccoli crowns
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons mayonnaise
  • ¼ teaspoon sea salt
  • ⅓ cup diced red onions
  • ⅓ cup dried cranberries
  • 1½ tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup or honey
  • 1 garlic clove, minced
  • ½ cup almonds
  • ½ cup pepitas
  • 1 tablespoon tamari
  • ½ teaspoon maple syrup
  • ¼ teaspoon smoked paprika

Instructions

1. Preheat the oven: Preheat your oven to 350°F and line a baking sheet with parchment paper.

2. Chop the broccoli: Cut broccoli florets into ½-inch pieces and dice the stems into ¼-inch chunks, peeling any tough parts.

3. Make the dressing: In a large bowl, whisk together olive oil, mayo, apple cider vinegar, mustard, maple syrup, garlic, and a pinch of salt.

4. Toss salad ingredients: Add the chopped broccoli, onions, and cranberries to the bowl and toss until everything is well coated.

5. Prepare almonds and pepitas: Spread almonds and pepitas on the lined baking sheet, toss with tamari, maple syrup, and smoked paprika.

6. Bake the topping: Bake the almonds and pepitas for 10 to 14 minutes until golden brown. Let them cool for 5 minutes to crisp up.

7. Finish and serve: Mix the cooled almonds and pepitas into the salad, saving some to sprinkle on top. Adjust seasoning to taste, and enjoy!
