Oklahoma Onion Smash Burger

Ingredients
- 1 lb. 80/20 ground beef
- 1 or 2 medium onions very thinly sliced
- salt and black pepper
- 4 slices American cheese (optional)
- 2 or 4 hamburger buns (2 for double patty burgers, 4 for single patty burgers)
- yellow mustard and dill pickles (optional)
Instructions
1. Preheat the Griddle/Skillet: Heat your griddle or large skillet over medium-high heat until the surface reaches about 400-450℉.
2. Prepare the Beef: Divide the ground beef into 4 equal portions and roll each into a ball (around 4 oz each).
3. Place Beef on Grill/Skillet: Place the beef balls on the preheated cooking surface. Add a generous amount of sliced onions on top of each ball, and sprinkle with salt and black pepper to taste.
4. Smash the Beef: Use a stiff spatula or burger press to smash the beef balls down to about 1/4 to 1/3″ thick. The onion-topped patties should be cooked undisturbed for around 3-4 minutes, until the onions begin to brown around the edges.
5. Flip the Burgers: Flip the burgers to let the onions spend some time on the cooking surface. If desired, immediately place a slice of American cheese on top of each patty.
6. Steam the Buns: While the burgers cook, place the top and bottom halves of the burger buns, cut side down, on top of the patties to let them steam in the burger juices.
7. Cook to Perfection: Continue cooking for another 2-3 minutes until the burgers are fully cooked and the cheese is melted.
