Instructions
1. Preheat and Prep: Set your oven to 350°F and warm up a large skillet over medium heat.
Brown and crumble the ground beef along with some minced garlic, sprinkling in Italian seasoning as the beef cooks.
Once browned, drain any excess fat and set the beef aside. In the same skillet, cook the spinach until it wilts, then remove from heat.
2. Cook the Pasta: While the beef is cooking, prepare the pasta shells according to the package instructions.
Be sure to cook them just shy of al dente so they keep their shape for stuffing later.
3. Mix the Filling: In a large mixing bowl, combine ricotta, 8 oz. of mozzarella, 1/2 cup of parmesan, eggs, oregano, and garlic powder.
Fold in the cooked spinach and half of the ground beef. Season with salt and pepper to taste.
4. Assemble the Dish: Spread the entire jar of pasta sauce evenly across the bottom of a 9×13-inch baking dish.
Carefully spoon the cheesy filling into the shells, then nestle them closely in the dish with the open side up.
5. Top it Off: Sprinkle the remaining ground beef over the stuffed shells, followed by the rest of the mozzarella and 1/4 cup of parmesan cheese.
6. Bake to Perfection: Cover the dish with foil and bake for 30-35 minutes, or until the cheese is bubbly and melted.
For an extra golden finish, remove the foil and broil for 3-5 minutes. Garnish with fresh parsley, serve, and enjoy!
Now that everything is well prepared, you can finally dig in. There is no doubt that anyone who tries this recipe will come back to it more than once because it is just that good.
